В школе учился играть на кларнете, самостоятельно освоил саксофон и с 16 лет работал на профессиональной сцене — сначала в оркестре трубача Кенни Бэйкера (1941), затем в бэндах трубача и гитариста Бобби Шервуда (1942–43), Сида Катлетта, трубачей Сонни Данхема, Боба Астора (1943–44), в армейском оркестре (1944–46) и в биг-бэнде Бенни Гудмена (1946–47). Известность принесла работа в биг-бэнде Вуди Германа (1947–49), когда Симс вошел в так называемое 2-го стадо, записав такие хиты, как Four Brothers и Early Autumn. Последними биг-бэндами в жизни Симса стали оркестры Арти Шоу (1949–50), Стэна Кентона (непродолжительные гастроли в Европе в 1953) и Бенни Гудмена (поездка в СССР в 1962), после чего саксофонист предпочитал играть в небольших группах, преимущественно в квартетах (иногда играл на сопрано-саксофоне).
